Spicy Sausage & Chickpea Soup
Serves 6
Ingredients
2 tablespoons olive oil
6 spicy sausages
2 cloves garlic – finely sliced
½ teaspoon chilli flakes
1 x 500 gram jar pasta sauce
3 cups chicken stock
2 cups water
2 cups mixed vegetables – chopped
1 x 400 gram can chickpeas
¼ cup pesto
½ teaspoon salt
Freshly ground black pepper
Grated parmesan cheese – to serve
Method
Prepare the sausages by squeezing from the casing and rolling into small balls
Dice the vegetables
Heat the olive oil in a large pot or casserole and cook the sausage, garlic and chilli until the sausage pieces are browned
Add tomato paste, chicken stock, water, vegetables and chickpeas
Add salt and ground pepper
Bring to a simmer and cook for about 10 minutes until vegetables are cooked but still tender
Check the seasoning and adjust if you need to
Serve in deep soup bowls with a big dollop of pesto and some grated parmesan cheese with plenty of extra ground black pepper
