Berry Compote
A beautifully textured and delicious sauce that combines well with ice cream, yoghurt or dolloped over meringues and pavlovas.
Ingredients
- 3 cups frozen berries, one type or a mixture 
- 2 bay leaves 
- 1 vanilla pod 
- 1 cup caster sugar 
Method
- Put all the ingredients in a small stainless steel pot, stirring until the sugar has dissolved 
- Simmer gently for 15-20 minutes until the mixture has reduced and is nice and syrupy 
- If storing, keep the bay leaves and vanilla in the compote, if serving remove them
