Kumara Soup

Super easy, delicious soup. Adjust the amount of curry powder or add chilli for extra zing!

Ingredients

  • 25 grams butter

  • 1 large kumara

  • 1 large potato

  • 1 brown onion

  • 1 ½ teaspoons curry powder

  • 2-3 rashers bacon (optional)

  • 3 cups chicken stock

  • 1 cup milk

  • Salt

  • Parsley or chives

  • Sour cream or crème fraiche

  • Crispy bacon or pancetta shards


Method

  1. Chop the kumara and potato into 1cm dice

  2. Finely chop the onion

  3. If using the bacon, remove the rind and cut it into small pieces

  4. Using a large pot, melt the butter and add the potato, kumara, onion, bacon and curry powder

  5. Cook until the onion is clear

  6. Add the stock and bring to the boil

  7. Reduce heat and simmer gently until the vegetables are cooked

  8. Allow to cool slightly

  9. Blend until smooth

  10. Return to the pot, add the milk

  11. Reheat until almost boiling

  12. Serve garnished with chopped parsley and or chives and a dollop of sour cream or crème fraiche

  13. If using bacon or pancetta for garnish a pan fry until crispy while the soup is simmering

  14. Drain on paper towels and allow to cool
