Kumara Soup
Super easy, delicious soup. Adjust the amount of curry powder or add chilli for extra zing!
Ingredients
25 grams butter
1 large kumara
1 large potato
1 brown onion
1 ½ teaspoons curry powder
2-3 rashers bacon (optional)
3 cups chicken stock
1 cup milk
Salt
Parsley or chives
Sour cream or crème fraiche
Crispy bacon or pancetta shards
Method
Chop the kumara and potato into 1cm dice
Finely chop the onion
If using the bacon, remove the rind and cut it into small pieces
Using a large pot, melt the butter and add the potato, kumara, onion, bacon and curry powder
Cook until the onion is clear
Add the stock and bring to the boil
Reduce heat and simmer gently until the vegetables are cooked
Allow to cool slightly
Blend until smooth
Return to the pot, add the milk
Reheat until almost boiling
Serve garnished with chopped parsley and or chives and a dollop of sour cream or crème fraiche
If using bacon or pancetta for garnish a pan fry until crispy while the soup is simmering
Drain on paper towels and allow to cool
