Peach & Vanilla Crumble Slice
Makes 12-15 Pieces
Ingredients
1 cup plain flour
½ teaspoon baking powder
½ cup desiccated coconut
½ cup brown sugar
125 grams butter
1 x large can peaches, drained
2 teaspoons cornflour
1 tablespoon sugar
1 teaspoon vanilla bean paste
For the crumble topping
½ cup flour
½ cup brown sugar
½ cup desiccated or thread coconut
½ cup rolled oats
75 grams melted butter
Method
Preheat oven to 180’C
Line a 20 x 30 cm slice tin with baking paper
In a medium bowl combine flour, baking powder, coconut, sugar, and butter and mix together to form a soft dough
Press the dough into the lined tin and smooth down with the back of a spoon
Put the slice in the preheated oven and bake for 10 minutes
While the slice is cooking, put the peaches, cornflour, sugar and vanilla in a small bowl and mix gently to combine
In a separate bowl mix the crumble ingredients together
Spoon the peach mixture over the par-cooked base
Sprinkle the crumble mixture evenly over the top, gently pressing it down
Continue to bake the slice for a further 20-30 minutes until it is golden
Set aside to cool
To serve
Cut into squares or fingers and dust lightly with icing sugar
Keeps several days in the fridge
