Oat & Ginger Crunch
Makes about 20 slices
This is a slice full of crunchy, spicy deliciousness. If you like crystallised ginger, some can be chopped finely and added to the top of the icing for an extra-gingery hit.
Ingredients
150 grams butter
2 tablespoons golden syrup
¾ cup brown sugar
¾ cup coconut
1 ½ cups rolled oats
¾ cup flour
1 ½ teaspoons baking powder
1 ½ teaspoons ground ginger
For the icing
4 tablespoons butter
4 tablespoons golden syrup
2 teaspoons ground ginger
1 cup icing sugar
Method
Preheat oven to 180’C
Line a 20 x 30cm slice tin with baking paper
Combine all the dry ingredients in a large mixing bowl
In a small saucepan melt together the butter, golden syrup and brown sugar and remove from the heat
Pour the liquid mixture into the dry ingredients and mix well to combine
Press the mixture into the slice tin
Place in central position in the oven
Bake for 15-20 minutes
Cool completely then ice with ginger icing
For the Ginger Icing
Sift the icing sugar and ginger together into a small mixing bowl
In a medium sized pot, gently heat the golden syrup and butter together until melted
Remove from the heat
Add the icing sugar mixture to the butter/syrup mixture by the spoonful, whisking after each addition so that it is nice and smooth
Pour over the slice and spread evenly with a hot knife
Let the icing set before cutting into pieces
Store in an airtight container
