Chocolate Weetbix Slice
Makes about 20 slices
Ingredients
CHOCOLATE ICING
1 cup icing sugar
1 tablespoon butter – melted
4 teaspoons cocoa
Hot water to mix
BASE
180 grams butter
1 teaspoon vanilla essence
1 cup desiccated coconut
3 weetbix
1 cup flour
1 teaspoon baking powder
¾ cup sugar
¼ cup cocoa
Method
For the base:
Preheat the oven to 180’C
Melt the butter and add the vanilla
Put the dry ingredients in a large bowl, pour in the butter mixture and combine well
Press the mixture into a lined slice tin
Bake for 15-20 minutes until firm
Remove from the oven and allow to cool
Ice with chocolate icing
Top with coconut
For the icing:
Sift the icing sugar and cocoa into a medium sized bowl
Pour in the melted butter and combine-the mixture will be stiff and lumpy
Add hot water in teaspoon portions.
Combine well after each addition until you have the consistency of icing you would like-generally like soft butter so it is easy to spread over the slice
Top with coconut if desired
