Blueberry Bran Muffins
Makes 12 Muffins
I have used blueberries in this recipe but any fruit that you prefer will work well.
Ingredients
½ cup wholemeal flour
½ cup plain flour
½ cup raw sugar
1 cup bran flakes
1 cup fresh or frozen blueberries
½ teaspoon salt
2 tablespoons butter
2 tablespoons golden syrup
½ teaspoon baking soda
1 cup whole milk
12 paper muffin cases
Method
Preheat the oven to 200’C
Prepare a muffin tin by lining with paper muffin cases
Combine the flours, sugar, bran flakes and salt in a large mixing bowl
In a medium sized microwave bowl melt the butter and golden syrup together and whisk to combine
Heat the milk and add the baking soda, stirring so that the soda is activated and froths up
Combine the butter and milk mixtures
Add liquid to dry ingredients and stir to combine them well
Gently fold in the blueberries (if you do it vigorously the blueberries will be crushed and stain the muffin batter)
Fill each muffin case with about ½ cup of the mixture
Place on a wire rack in the centre of the oven
Bake for 15-20 minutes until the muffin springs back when gently pressed in the centre
